On Sunday morning I decided to do something new with pancakes. I made chocolate coconut pancakes. I was really hoping they'd be a hit and they were! Cave Baby LOVED them!

Since I was already doing something a little different, I thought it would be the perfect time to try the beef bacon I picked up at Trader Joe's.

The beef bacon was absolutely delicious! I prefer it to turkey bacon for sure. And it was right on par with pork bacon...but I think if I had to choose one and only one it would be pork. It really was good, though, and I'll be picking more up the next time I make a TJ's trip.

For lunch I just made something really quick because I always run out of time (we play hard and it seems like it's almost time for her daddy to pick her up before I can even think about lunch!).

Monday's lunch was nice and easy as well.

Dinner was quick and easy and I swear this is not all my child ever gets!

Tuesday Cave Baby goes with her Daddy from the time she wakes until dinner (this was the second week...still transitioning). Her daddy isn't into Paleo despite me explaining all of the benefits and even particular benefits for Cave Baby. I've given him articles, etc. So, I like to give him plenty of food to feed her. Even so, he often throws away what I've made and gives her SAD food. I'll keep doing it, though. This is the lunch I packed for Cave Baby:

Dinner consisted of me asking Cave Baby what she wanted and just making it. Thank goodness she asked for something fast and easy to make. I had CF from 5:30-6:30, but it ran a little late (we were chatty), so Cave Baby and her daddy were waiting on me to get home. Needless to say, I was strapped for time.

I swear my child does not live on taco meat and almond butter sandwiches alone! We've just been on a kick lately! Here's her dinner: taco meat (made with ground turkey), carrot stick, grapes, and apple slices.
Lunch today was Sun Dried Tomato Chicken Bake from Everyday Paleo. I printed the recipe in March, when Sarah posted it, but haven't gotten around to making it. Oh.My.Gosh. It's probably the best thing I've ever eaten in my life. Really. Make it. Seriously. |

Dinner was really easy and delicious. I made my favorite go-to crockpot recipe, as I had a ton of chicken in my fridge that I needed to use up. That was actually my inspiration for lunch as well. I thought I could kill two birds with one stone. So as I prepped lunch, I also prepped dinner, tossing everything into the crockpot before even putting lunch in the oven.

| Mix curry paste, double reduced coconut milk, sea salt, pepper and Penzeys garlic together in the crock pot. |
